Mediterranean Buddha Bowl


  • 1 cup kale or spinach
  • 1/3 cup cooked quinoa
  • 1/4 cup tomatoes, chopped
  • 1/4 cup cucumber, chopped
  • 2 tbsp roasted beets
  • 2 tbsp olives, chopped
  • 1 tbsp feta cheese, crumbled
  • 1 cup roasted chicken or 1/2 cup chickpeas
  • 2 tbsp pesto
  • Juice 1/2 lemon

Prepare chicken and quinoa ahead of time. Combine all ingredients in a bowl and drizzle with pesto and a squeeze of lemon. Enjoy!
